WHO?
The head chef and master of the stoves is Nicolas Román Vanden Berghe, a young, cosmopolitan chef with a long professional career. He is creative and very skilled, and he has been trained to respect the quality food and to quest for flavour.
HOW?
Food and flavour are the two keywords that best describe Palau Alameda gastronomic project. We combine tradition and vanguard, local and international product. From espencat with katsuobushi to yellow salmorejo with smoked eel, we mix Valencian products with Japanese, Peruvian or Thai dishes.
